Pumpkin Bread (makes 2 loaves/4 small)

organic whole wheat flour |

Ground cloves |
| 2 cups |
turbinado sugar |

nutmeg |

baking powder |
|

beaten eggs |
| 1/2 tsp. |
baking soda |
|
1 cup |
olive oil |
| 1/2 tsp. |
salt |
|
1 tsp. |
vanilla |
| 1 tsp. |
cinnamon |
|
1 1/2 cups |
cooked pumpkin |
| 1 cup |
chopped pecans |
|

|
Combine eggs, oil, vanilla, and pumpkin. Stir dry ingredients into
mixtures. Fold in pecans. Pour into greased loaf pans.
Bake at 325° for 1 hour (small) or 1 hr. and 10
mins (large).
